3.1.1) Preservative: A preservative is a natural or synthetic chemical that is added to products such as foods, pharmaceuticals, paints, biological samples,wood, etc. to prevent spoilage, whether from microbial growth or undesirable chemical changes.- 3.1.2) Atjar: “Achar”, the Hindustani word for a variety of spicy pickled side dish or condiment. - 3.1.4) Jam: Jam refers to fruit, or vegetables, that have been prepared, canned or jarred for long term storage. The preparation of fruit preserves traditionally involves the use of pectin.
- 3.1.5) Piccalilli: Piccalilli is a pickle of chopped vegetables and hot spices, generally mustard. Ingredients may include green tomatoes, cabbage, gherkins, cauliflower and onions, but virtually any type of vegetable can be used
